Simple, Spiced Banana Muffins

The perfect sweet snack!


With a drool-worthy, doughy, moist texture and filled with some simple ingredients.

These muffins are naturally gluten + dairy free, incorporating some tasty spices for a mega dose of taste bud heaven! Give them a go and let me know your verdict?


Ingredients:

3/4 cup of ground almonds

1/4 cup of coconut flour

1.5 level tsp baking powder

2 tsp ground cinnamon

1 tsp mixed spice

2 over-ripe (spotty) medium bananas, mashed

2 tbsp coconut oil, melted

2 tbsp organic runny honey

1 dessert spn black strap molasses (or replace with honey)

2 organic eggs

1 tsp pure vanilla extract *optional

Directions:

Preheat oven to 180c and line a 12 hole muffin tin with cases.

In a bowl, mix all of the dry ingredients together.

Melt the coconut oil and in a separate small bowl, whisk all the wet ingredients together.

Add the wet ingredients to the dry and gently stir together until combined.

Evenly pour the mixture into the muffin cases and bake in the center of the oven for 20-25 minutes until set and a toothpick comes out clean. Remove from the oven and pop on a wire rack to cool before diving in.
